Originating from the Spanish region of Andalusia, over the years many new versions have emerged of this recipe, that’s traditionally made with ripe tomatoes, bell peppers, cucumbers, garlic, and bread moistened with water and blended with olive oil, vinegar, and ice water and served cold.
Traditionally eaten by workers in the vineyards, olive plantations, citrus groves, wheat fields, or cork farms, Gazpacho was originally a recipe made of nothing but bread, water, and olive oil, all pounded in a large wooden bowl and generally eaten by the lower class or poor people of the region.
